3 Last-Minute Thanksgiving Sides That Will Be Ready In No Time

It’s Thanksgiving, are you scrambling to get things done?  Or have you forgotten a dinner side in the scramble to get the turkey done? Well never fear. Here are 3 easy Thanksgiving sides that you can whip up in no time to save the day.

1. Oven-Roasted Asparagus 

Prep Time: 10 mins

What you’ll need:

  • Asparagus
  • Salt
  • Pepper
  • Garlic
  • Olive Oil

After you cut off the ends, place asparagus on cookie sheets, and season with salt, pepper, garlic, and olive oil.

With the oven set at 350°, bake for 10 minutes. Once done, transfer to a serving tray and sprinkle with almonds.

2. Honey-Roasted Carrots

Total Time: 25-30 minutes

What You’ll Need:

  • 2 pounds baby carrots with tops
  • 2 teaspoons olive oil
  • 3 tablespoons butter, divided
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 shallot, finely chopped
  • 2 tablespoons apple juice
  • 2 tablespoons honey
  • 1 tablespoon chicken broth or water
  • 1/2 teaspoon chopped fresh thyme

Preheat oven (with a small roasting pan inside) to 500°. While preheating cut tops of carrots to 1 inch, or cut off completely if you choose. Combine 1 T. butter and oil in the preheated pan, add carrots (make sure to completely coat them in the butter/oil mixture), season with salt and pepper. Bake for 10 minutes.

As the carrots are baking, melt the last 2 T. of butter in saucepan, adding shallots, and sauté for 60 seconds. Turn off heat and stir in apple juice, honey, and broth (or water). Bring to a boil, stirring occasionally. Reduce to medium heat and cook until mixture reaching the consistency of a syrup.

Drizzle the syrup over the carrots and completely coat them. Bake for an additional 5 minutes until carrots are crispy. Sprinkle with thyme once platted.

3. Sautéed Green Beans With Bacon

Total Time: 15 minutes

  • 1 3/4 pounds fresh green beans, trimmed
  • 1/4 cup water
  • 8 bacon slices, chopped
  • 5 green onions (white bottoms and light green parts of tops only), chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Start by adding 1/4 cup of water with beans in a microwave-safe bowl. Wrap with plastic wrap, cut a hole to vent, and microwave for 5-7 minutes. Then immediately place beans in cold water to stop the cooking process. Drain, then set aside.

Cook chopped bacon. Make sure to keep about 2 tablespoons of the drippings for later. Sauté green onions in skillet, (using the bacon drippings) over medium-high heat for about 1 minute. Stir in green beans, season with salt and pepper; sauté for 3 minutes Then stir in bacon.
